kale sunday
alright...alright...you know we're based in brooklyn so kale was an inevitability. listen, kale tastes like steel wool- we won't even deny it. but we discovered that, like most things, if you slather it with avocado and cheese, it's not so bad. to usher in fall, we've made a little kale caesar paired with a nice glass of wine. if you're in the mood to get weird, serve this bad boy with a serious steak. trust us, it's delicious.

ingredients
- 1 bunch kale
- 1 clove garlic
- 2 tsp. kosher salt
- juice of 1 lemon
- 1 avocado, peeled and pitted
- 1/4-1/2 c. olive oil
- 3 TBSP pine nuts
- 1/4 c. parmesan cheese, grated
kale caesar
serves: 4
1. Wash kale and tear into bite sized pieces. Set aside to dry.
2. In a food processor add garlic, salt and lemon juice. Blend until the garlic clove is finely chopped.
3. Add avocado and blend until smooth.
4. Slowly pour olive oil through the top of the food processor as the mixture is blending to incorporate all ingredients. Once smooth, set aside.
5. In a small frying pan, toast pine nuts over low heat for 5 mins or until brown. Set aside.
6. Toss together kale, pine nuts, and dressing.
7. Top with parmesan cheese.
8. Enjoy!
