fried sunday
EVERYTHING IN THE UNIVERSE IS BETTER WITH DEEP FRIED CHEESE. everything. MAYBE it'S JUST OUR MIDWEST ROOTS SHOWING, but can you think of anything that wouldn't be made better with melty, fried goodness?
POP TARTS, you say? YUP. STUFF WITH GOAT CHEESE, BEER BATTER IT AND FRY THAT SUCKER. BEEF JERKY? you bet - MAKE A CROQUETTE. flowers? yes, yes and yes. fried zucchini blossoms are one of the most magical parts about the end of summer. plus, you can feel better about making mozzarella sticks cause you know...they're vegetables.
we're not trying to tell you how to live your life, but there's only 25 days left until lABOR DAY. WHY WASTE ANY OF THAT TIME WITHOUT SOME combination of prosecco, fried flowers and live music?

ingredients
red pepper aioli
- 2 cloves garlic
- 1/2 tsp. kosher salt
- 1/2 c. olive oil
- 3 egg yolks
- 1 red bell pepper, chopped
fried zucchini blossoms
- 15 zucchini blossoms
- 8 oz. ball of fresh mozzarella, sliced
- 15 basil leaves
- 1 cup flour
- 1 1/2 cups seltzer water
- 2 cups vegetable oil
- 1/2 tsp maldon salt

1. In a food processor, chop the garlic.
2. Add three egg yolks and turn on. Slowly incorporate the olive oil and blend until it becomes a thick paste.
3. Add red bell pepper and blend.
4. Refrigerate before serving.
5. Prep zucchini blossoms by taking out the stamen.
6. Stuff each blossom with one slice of mozzarella and one basil leaf. Set aside.
7. Mix flour and seltzer until smooth.
8. Heat vegetable oil in deep skillet over medium heat. Oil should get very hot, but slowly. Test the oil by flicking a tiny bit of water in it. If it sizzles, it's ready.
9. Once the oil is ready, dip the stuffed blossoms one at a time into the batter. Shake off excess batter and carefully place into the oil.
10. Fry until golden brown (roughly 5 minutes).
11. Once out of the oil, drain on a few sheets of paper towel. Immediately dust with maldon salt.
12. Enjoy!
