the weather has turned, salvation army bells are a-ringing and the only thing that fits has an elastic waist band. you know what that means? it's officially the holidays. so put on some slippers, make a bacon grilled cheese and press play on love actually. this whole set up is almost as good as hugh grant dancing around 10 downing street...almost...

ingredients

Grilled Cheese

  • 2 slices sourdough bread 
  • 2 1/4 in thick slices cheddar
  • 1 TBSP bacon jam
  • 1 TBSP + 1 tsp butter

Bacon Jam

  • 6 slices bacon
  • 1 cup coarsely chopped yellow onion
  • 4 TBSP butter
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/8 tsp freshly ground pepper
  • 1/4 c. sherry
  • 1/4 c. chicken stock
  • 1/4 c. loosely packed brown sugar

Grilled Cheese

  1. Take butter out of fridge to bring to room temperature.
  2. Turn non-stick pan onto medium-high and wait 3-4 minutes.
  3. Melt 1 TBSP of butter into pan.
  4. Place cheese slices on one side of bread.
  5. Smear bacon jam on opposite of bread and combine cheese and bacon jam together.
  6. Place cheese side down first and cook for 4-5 minutes or until bread turns golden brown. While cooking side one smear 1 tbsp remaining butter on the top side of sandwich.
  7. Turn sandwich over and cook for 3-4 minutes or until golden brown. Be sure to press down on the sandwich 2-3 times.
  8. Remove from pan and let sit for 60 seconds.
  9. Cut on the diagonal and get started.

Bacon Jam

  1. Cook bacon in a skillet over medium heat.
  2. Drain bacon on paper towel and power out rendered fat, reserving 1 TBSP in the pan.
  3. Melt butter in the pan and add onions. Cook for 15 minutes.
  4. Add garlic, salt, and pepper. Cook for 2 minutes
  5. Stir in sherry, chicken stock and brown sugar. Cook for 5 minutes. 
  6. Remove from heat and allow to cool for 10 minutes. 
  7. Blend bacon and onion mix in a food processor until smooth.
