apple sunday
you ever have one of those weeks that just kicks you in the pants? ya us, too.
but you know what they say...when one door closes another one opens. and what if that door was on an oven? and what if that oven had an apple pie in it? it doesn't make it all better, but it certainly doesn't hurt.
with that crisp fall chill in the air, we can't think of a better pick-me-up than an apple pie. WE GET THAt MAKING pie SEEMS SUPER DAUNTING, SO WHY NOT try A LITTLE HACK TO MAKE A PERSONAL PIE any time you want?
and because we're all about ease and efficiency this week, just pour yourself a little whiskey, no recipe required.

ingredients
- 1 puff pastry shell (such as this)
- 2 TBSP butter
- 1/2 tsp. cinnamon + more for dusting
- 1 tsp. granulated sugar + more for dusting
- 1 apple, cubed
- serve with a scoop of vanilla ice cream
personal apple pie
serves: 1
1. Preheat the oven according to the directions on the puff pastry box.
2. Dust the top of one shell with cinnamon and sugar and bake as directed.
3. In a skillet, melt butter then add cinnamon and sugar over medium heat.
4. Add apple and sauté until apples are soft (roughly 5 minutes)
5. Fill the center of the puff pastry with apple compote. Top with the little puff pastry "hat." (yes, that's a technical term).
6. Serve with a scoop of ice cream and enjoy!
